Cow's Milk Cheeses
Mt Buninyong Mist
A triple cream Jersey milk cheese made using a traditional French method. Mt Buninyong Mist has lush, creamy texture that gently oozes with a rich buttery flavour.
Warrenheip White
A traditional brie style cheese made with Friesian Holstein milk. Warrenheip White has a smooth creamy texture with a complex earth flavour as it matures.
WARRENHEIP ASHED
Warrenheip Ashed is our traditonal brie style cheese made with Friesian Holstein milk enrobed in a light coating of vegetable ash. The ash gives the cheese a more rounded flavour and a softer texture. This is our most poplular surface ripened cheese.
GOLD SOVEREIGN
A French inspired cambembert. The texture is rich and creamy. The flavour is reminiscent of a good French camembert. We are unable to make a raw milk soft cheese so we have reverse engineered the cheese with cultures and maturation teachniques to give the cheese a flavour as close to a raw milk camembert as possible. This cheese is available seasonally from April until October.
Goat's Milk Cheeses
OTWAY WHITE
Otway White is a goat milk camembert style cheese made to a traditional Normandy method. The texture is lush and creamy. The flavour is complex and goaty (but not too goaty!).
